Second day making your own wine!

Down in the cellar:
So what happened to your juice during the night? The first task of the morning is to find out. The scene is now an 11th century limestone cave. Impressive? Not as impressive as your wine. As you sample it with the chief winemaker, you’ll learn a lot. You’ll also taste the different barrels and come to understand the meaning of oak, be it American, French or Russian. You’ll measure the alcohol content and feed your yeast using the traditional “bâtonnage” process.

Cellar lunch:
The cellar for our lunch venue has been carved out of the limestone cave. The Chief Winemaker will show you his personal cellar where he keeps his winemaking secrets in dozens of bottles produced over the last 12 last vintages. Feel like trying a two-year-old Cabernet aged in Russian oak? Let’s do it! Some good French bread, and a wonderful “Blanquette” will help you last through the afternoon.

Customize your cuvée:
It’s time to turn your thoughts to what you’re going to take back home - your wine. Tasting and discussing with the experts, you will learn to make your own blend. Choose your cork and design your back label then select your wooden cases. You might be thinking there are no secrets left and you’re almost right. There’s just time for a final tasting - you’ll never see wine in the same way again.

Escape dinner:
During your final dinner, broaden your experience by listening to Didier, our Head Sommelier at the Château share his knowledge of how to match food and wine.
